why was slave labor so important to the economy of the southern colonies?

Slaves were the people who did all of the hard labor in the South. They lived on plantations and worked in the fields to pick cotton, tobacco, and rice which then resulted in a profit for the plantation owners. These owners would then sell the raw materials to the north who would make products and sell them back to the 
south.
